I just made the soup & I absolutely loved it! I roasted the squash (great suggestion), added a little cayenne, & topped it with some bacon. Absolutely delicious!

This is the absolute most wonderful soup I've made in a really long time. It is so sweet and smooth, it's just heavenly. I followed the recipe with these exceptions. I used two honeycrisp apples, I nuked the butternut squash for 20 minutes so it was completely cooked and soft when I added it to the other ingredients, I had no stock on hand so I used chicken bullion cubes with water (eek! I know), I didn't use any apple juice or cider (none on hand) and I only used 1/2 T of curry. Even with all these changes the soup was absolutely delicious!

If you nuke your squash for one minute (I cut it in half, top and bottom), it's oodles easier to peel and cube. Did it just tonight with no trouble!

This soup was completely smooth. And the trick to this is making sure that the butternut squash is totally tender before putting it in the blender. Honestly, I've peeled and cubed it and it's like a workout! Too much work for me. It's so much easier to roast it and I also think roasting it really brings out the flavor.

this looks wonderful. I tried to make butternut squash soup once before, but I just couldn't get it as smooth as I wanted it! Is yours completely smooth or does it have any chunks in it? Plus I peeled and cubed my squash and swore to myself I would never do that again. I like your tip of cutting it in half and roasting it. I might actually try again now :)
