[...] Butternut Squash Mac & Cheese from Adrianna @ A Cozy Kitchen. I’ll be honest, I’ve made this recipe half a dozen times over the past year, and I never tire of it. Now that butternut squash is in season, I’m ready to tackle it again. As an added bonus, all of my boys love it. I may or may not have neglected to tell them that there was squash in their mac & cheese, but what they don’t know…they don’t know. Shhh! No harm, no foul. Photo by Ree @ thepioneerwoman.com [...]

This is probably obvious to anyone who's ever roasted butternut squash, but be as precise as possible about cutting it in half cause when one side is done in 30 and the other isn't, you're gonna be sad. Also, when you put it back into the oven at the end, I'm assuming 375 again... am I wrong?

Yum, this looks like the ultimate comfort food. I just used half a butternut squash as an add-in for the tortilla soup recipe you posted today, and now I know exactly what to use the other half for!

Sure hope you roasted the seeds with little salt. Wash them in a colandar swirling the goop with your hands and the seeds will separate from the strings... salt or spice up and roast on a sheetpan (w/silpat)in oven 325 for 30 mins. Yum, like pepitas... you can also do the same with honeydew and cantalope seeds. Eat the shells, no problem when they're roasted or shell if you like. I sometimes just separate the seeds from stringy stuff and leave more of the squash flavor on. You can also boil them in salt water, then roast... either way they're good! Little things like this make me want to use papaya seeds for ground pepper too!

Love this. I roasted a butternut squash last night and used 1/4 of it in a risotto, but I have 3/4 for tonight. My dinner homework is done. Bravo!
