Hello =) i recently had a problem with an Etsy seller using my phtos to sell her product claiming they were "her own", i then found 19 more bloggers she had stolen from and now with new listings (im keeping watch) she has taken your photo!

http://www.etsy.com/listing/63868489/carrot-cake-cookie-wiches-1-dozen

If she has used it without permission PLEASE do something about it, as she needs to stop stealing from others to sdvertise her baking business!

These were absolutely DELECTABLE.

I didn't have unsalted butter on hand and resorted to the salted, so they were a tad on the salty side, but nevertheless awesome!

Thanks so much for the recipe. These will be made again! :)

2 things I love: carrot cake and whoopie pies. These look amazing! Good thing we grew up to like vegetables AND coffee. I would be lost without them. Speaking of, I should go get an afternoon cup...

Taryn, I actually used a blender (I just changed it in the recipe) and it worked great. I'd recommend putting the whole oats in the blender since oat flour is silly expensive. If you don't have a blender, then I would substitute with 3/4 cup of oat flour. Homemade oat flour can be swapped out equally for store bought. Let me know how they turn out!

I was really excited about making this recipe for a bake sale, but then I realized you have to grind the oats. I don't have a food processor...could I just use store-bought oat flour? If so, how much do you think I should use? I doubt that 3/4 c of whole oats equals the same amount of fine flour.
