Yesterday I was pretending to be a fancy pastry chef (in my brain) and found myself writing complicated dessert recipes that had long names and forced me to use my non-existent French accent. Do you say croissant like a French person? Don’t do this. Josh used to do this and I put a stop to it. “Cru-sauuuuunt.” No, you’re American. Stop.

Anyway, as I was feeling fancy and on top of the world but then like it always does, the universe humbled me. Yesterday it came in the form of making me sneeze mid-mascara application. Has this happened to you? The results were mascara smudges all on my eyebrows and upper cheeks. I’m pretty sure it was to serve as a reminder that while I can do fancy dessert from time to time, deep down my roots are in normal people foods like spaghetti and meatballs, biscuits and chili.

Luckily for me, Ree had sent me a copy of her new cookbook. It’s filled to the brim with holiday recipes. Each chapter is a new holiday. As I was thumbing through it, I became enamored with the “Game Day” chapter, which is somewhat strange seeing as there isn’t one football watcher in my household. (Amelia is a tennis-watcher, actually.) I looove game day food, so I wasn’t surprised when I wanted to make every single recipe. I settled on this Chipotle Chicken Chili. It was chilly…for LA, anyway, and I’ll use any excuse to make soup in socks.

This recipe has two of my favorite things in it: beer and chipotle peppers in adobo. Good gracious. And it has just the right amount of chipotle peppers, too–it’s just right! I also love the variety of beans: kidney, white Northern beans and black beans.

I followed the recipe to a T, which I usually never do because I’m a brat, but found it so soothing to just look at all the step-by-step pictures and follow instructions for once.

After I took this photo, I added an embarrassingly large dollop of sour cream and a sprinkle of cheese to the top of this thang and ate it in under five minutes–it was a glamorous moment!

Chipotle Chicken Chili

Print this recipe!

2 tablespoons olive oil
1 large onion, diced
4 garlic cloves, minced
2 pounds boneless, skinless chicken breasts (or thighs), cut into bite-size pieces
One 12-ounce bottle Mexican beer (or any beer)
One 14-ounce can diced tomatoes
3 chipotle peppers in adobo, minced
One 14-ounce can black beans, drained and rinsed
One 14-ounce can pinto beans, drained and rinsed
One 14-ounce can kidney beans, drained and rinsed
1 tablespoon chile powder
1 tablespoon ground cumin
2 teaspoon salt, more to taste
Heaping 1/4 cup masa harina (corn flour)
Juice of 1 lime
Sour cream, for serving
Grated sharp Cheddar cheese, for serving
Chopped cilantro, for serving

1. Heat the olive oil in a large pot over medium-high heat, then add the onion and garlic. Stir them around and cook them for 2 to 3 minutes, until they start to soften.

2. Throw the chicken into the pot. Stir the chicken around and cook 3 to 4 minutes, until lightly browned. Pour in all but 1/4 cup of the beer…Then add the tomatoes. The minced chipotles. And all the beans! Stir to combine, then add the chili powder, the cumin and the salt.

3. Bring the chili to a boil, then reduce the heat to a simmer. Cover the pot and let it simmer for a good 45 minutes to 1 hour, until the sauce is slightly thicker and the flavors have had a chance to combine.

4. After that time, combine the masa harina with the remaining beer. Whisk it with a fork until it’s smooth. Then pour it into the chili. This will thicken it up a little more and give it a really nice flavor.

5. Next, squeeze in the lime juice. Then stir it around and let the chili simmer for another 10 minutes or so, until it’s thick and lucious.

6. Lookie here! Now go ahead and taste a bite and make sure the seasonings are good. Add more of whatever it needs. Serve it with a dollop of sour cream, a sprinkling of Cheddar, and cilantro!

That chilli looks awesome, and I feel you on the mascara-sneeze situation. I don’t know whether it’s focussing so hard, but I seem to sneeze more often while putting make-up on than in any other situation.

For my dream vacation, I would hit up St Moritz – ever heard of it? It’s basically a super swanky town in the Swiss Alps; beautiful slopes, glamorous people, great food, and boot weather. AKA heaven.

Dream vacation? I think I’m supposed to say a week relaxing on a tropical beach and that DOES sound nice, but my husband and I were actually talking about our wedding anniversary the other day. Last year we did a quick weekend in Newport, RI (because we lived in MA) and loved it. However, we were doing Newport on a budget. I would love to be able to go (maybe when it’s a little warmer!) and really DO Newport: stay at a luxury hotel, get the room service and the spa treatments, tour all the mansions, eat really nice dinners, etc.

That chili looks divine. I make a similar one with ground turkey and a bit of grated sweet potato and just a pinch of cinnamon.

I have had the mascara-sneeze situation happen more often than I’d care to admit. The worst is when you sneeze about 2 seconds after you’ve successfully applied your mascara, and don’t think to check the mirror before you run to work, and then realize once you get there, that you have little raccoon scratches all over your face. So cool.

I would go to Italy to stay for one month. Ideally I would be in a small town in Tuscany where I could get to know some of the people who live there and be able to take cooking classes. I would also take day trips to other areas of Italy.

Ever since I was a kid, I have dreamed of going to Maine and getting as far east in the U.S. as possible. (I live in California.) I would love to stay in a lighthouse in Eastport, and then rent a cabin in the woods by a lake for a month or so.

Thailand, Vietnam and Cambodia. You would have to go for at least a month or longer. I’ve spent 12 days in Thailand and want to go back for more. That just wasn’t enough time to get the full experience. It was the most amazing vacation and I want to check out its neighbors too.

I have so many dream vacays, but they all involve great food cities. I am all about an eat-cation. If I have to be specific, I’d say South Korea…I was born there and haven’t been back since I was 10.

My favorite vacation would be two months in France and Italy. We would tour each of the major food and wine regions of each country. Each day would be spent trying a new winery and new places to eat. The focus would be on places that featured local dishes with (obviously) local ingredients. The tough part would be deciding in which season to have the vacation. Each season has its unique dishes based on what is available. We are planning a trip to France for our 30th wedding anniversary next year. Of course, it is only ten days, but we hope to make each one count.

But…my dream vacation would be taking my 3 beautiful boys with me to Maui/Hawaii. My dream vacation is spending a couple of weeks in Squaw Valley, Lake Tahoe, in the winter. I grew up skiing with my family at Squaw every year, and it holds a very special place in my heart. There is nothing better than a full day of fresh powder followed by pizza at Fireside in the Village.

Questions

1) Do you think it would be okay to sub out ground turkey instead of chicken pieces?

2) Is corn flour the same as corn meal?

This is such perfect timing :) I’m having people over for chili on Friday and was planning on making one vegan chili (your recipe!) and one non vegan recipe with turkey. Hopefully I can adapt this one!

1. Yes, that’d definitely work.

2. Cornflour is different than cornmeal. Cornflour is a finer grain (almost similar to the consistency of all-purpose flour), while corn meal is very gritty. In this case, it’s used as a thickener, but honestly it was a great chili even before I added the corn flour, so if you want to skip that step, the recipe will still work. Hope that helps!
