Roasted Tomato Caprese Salad

Some days just don’t go well. I started off Monday by waking up to darkness when I had been used to seeing sunlight. I therefore convinced myself that I was owed a few more minutes of sleep, resulting in me leaving a few minutes too late for work. Not so good.

At work I couldn’t find my cell phone, and assumed it had been left it at home. To be honest, I would have been happier going through the day without clothes rather than my phone. This is a sad, but true, fact.

I trudged through the day, only to accidentally throw my keys into a dumpster, (please don’t ask me how) not realizing this until said dumpster had been locked up for the night. I do these things. It’s something you should know about me.

When I got home I couldn’t find my phone and deduced it had actually been in my car the whole time. That is was, in fact, still in my car. Fail. Epic, epic fail. Seriously, this happened.

There are few remedies to days like this, although, I have found a couple to be effective. One is to watch footage of the recent tsunami and realize that every complaint I have is ridiculously minor compared to what others go through. For real C, stop whining.

This Caprese Salad also makes things better. It makes me remember that life is awesome. And delicious. It’s a good thing.

Roasted Tomato Caprese Salad

Print this recipe!

6 roma tomatoes, halved with seeds removed

2 tablespoons olive oil

1 teaspoon sugar

Salt

Pepper

Sliced fresh mozzarella cheese

Fresh basil leaves

Sliced French bread (optional)

Preheat the oven to 450 degrees F.

Arrange the tomatoes on a lined baking sheet and drizzle with the olive oil. Sprinkle the sugar, salt and pepper over them and toss to coat. Bake for 25-30 minutes, or until the tomatoes are shriveled and starting to brown on the edges.

Allow the tomatoes to cool a bit. Arrange on a plate with the sliced mozzarella and basil. You can also layer the ingredients onto french bread to create a variation of bruschetta. All of it tastes good.

Oh hi spring! This salad gives me hope for sunshine and warmth. Also, I think you deserved something a bit more like a mountain of brownies after a day like that! I once locked my cars and bag in the car as I was arriving for a job interview…so I had to go to the interview sans bag and call my husband from the interviewer’s office to come rescue me. Somehow they still hired me…so there is hope for clumsiness.

that sounds like QUITE a day. Caprese salad always makes me think it’s summer. And summer always makes me happy. So I think this was the perfect solution to all of your problems. To all of everyone’s problems, actually.

I’m glad I saw this, I actually have some tomatoes I need to use up soon and roasted tomatoes are so amazing, it really brings out the flavor! I don’t have any mozzarella but I do have some ricotta that I could work into this little snack!

well said, girl. i have had some super crappy days lately, but i refuse to let them get me down! if i choose to, i can focus on what isn’t going my way. but i try my best to focus on gratitude and thanking God for the beautiful blessings i do have. that salad looks like just the thing to turn a crummy day around! xo
