Last Friday my stove decided to have a tantrum and stopped working. Kind of annoying…I had serious cooking plans for a picnic. Instead I just ate wine and half a cupcake. It worked out juuuust fine.
Cut to this week: still no stove…I kinda started hoping it needed to be replaced. How dreamy are those O’Keefe and Merritt stoves?! In pale blue?! Hello cuteness!
Sooo…I dug out my toaster oven and started putting stuff on toast. All sorts of stuff. Possibilities…endless.
And then, as soon as my stove was fixed, I made this poached egg and put it on a piece of bread with some salt, pepper and parmesan. Runny eggs are just swoon-worthy, aren’t they?!
Almond butter and sliced strawberries. Delicious. Sweet. Killer combo.
I’m not even gonna start by telling you that turkey bacon compares to regular bacon. It just doesn’t. It can’t. Impossible. It’s healthier, though, so there’s that.
BACON > TURKEY BACON/EVERYTHING…for life.
But I just bought a few bathing suits this week and have yet to try them on. Ugh.
So here you have it: turkey bacon, a few basil leaves, a swipe of veganaise and a few sliced tomatoes on toast.
P.S. I don’t try bathing suits on in stores anymore. The lighting is heartbreaking. So now I just buy a bunch on a credit card, try them on at my apt, and take the ones that don’t work back to the store. Total game changer. Have you tried this?
Avocado on Toast is an all time fav. Adding some ricotta to the mix took it to a whole other level of amazingness.
In other news, this weekend I’m gonna celebrate my reunion with my kitchen by making something crazy…can we say doughnuts?! I dunno…they might be in mini form, they might be girly and pink, or they might have sprinkles in them, maybe even some amazing glaze on top. Who knows…the world is my doughnut…or whatever.

I want stuff on toast now too! You have all the best things bacon and avocado and those are the best things in the world. I love how inventive you are, if my stove broke it would be salads and nuked food.

Love. Avocado on toast is a fave although I usually smoosh it into an unattractive mess and drizzle some olive oil/salt on top. Same goes with banana and almond butter. Smooshed. My husband always *without fail* asks if I’m eating baby food. Hilarious.

the title of this one made me laugh. and i’m going to have to try that bathing suit trick because i swear stores have lighting that creates extra cellulite shadows. i always walk out wondering how i cold ever show myself in public in a bathing suit. ridiculous.

I love bread … I love everything you can put on bread … I love everything you can eat with bread … Just lately I told a friend back in the years Mum made delicious sandwich plates /canapes for guest why do we now have to have Dim Sum, Suhsi, Teriaki, Dips and things when a nicely piece of bread with a slice of cheese or ham or anything can look just as stunning?

just wanted to give you a heads up, turkey bacon IS NOT healthier than regular bacon. A single serving which is two slices has approximately the same amount of calories but turkey bacon has MORE SODIUM than the real stuff. Stick to the real stuff just don’t over do it. I love stuff on toast too. That poached egg looks fabulous!
So true! I have no idea why people think turkey bacon is so much healthier than regular bacon. Weight for weight, same calories, but more NA+ in the turkey bacon as you mentioned. Good call, Joanne!

Any helpful hints on how to poach an egg? Do you use any sort of contraption, or just crack an egg in some boiling water?
I actually don’t use a contraption but instead start by cracking an egg in a small bowl. I bring water to a simmer, add a tablespoon of white vinegar and then (using a spoon) create a whirlpool and gently add the egg. I let it poach for about 2 minutes. I hope that helps!!
Runny eggs make me swoon every time- who needs a man when there are runny eggs?!
Wait! I have a trick to make turkey bacon edible!
1 Tbsp soy sauce
1 Tbsp olive oil
1 Tbsp honey
Mix together and lightly brush on the bacon. Now cook it however you normally do — I usually bake it, but if your stove isn’t working I’m sure you could microwave it.
oh my goodness, i love this post!! i’m obsessed with toast and the vast smorgasbord of toppings that can go on it. toast is probably my #1 food – so easy, so versatile, so simple, yet so good. avocado mashed with a little bit of soy sauce and lemon on toast is divine. i also love toast topped with goat cheese, sliced dried figs, and sliced almonds. butter and orange marmalade is a mainstay, and one trick i learned in italy is to roast garlic; drizzle fresh olive oil on toast, then rub the roasted garlic all over the toast – so good!
Mmm love avocado toast. I’ve never tried it with ricotta before though. Great idea!
