Cheddar Cheese

Confession: sometimes I’m a brat. This is totally true. Sometimes I’m sleepy, my eyelids are heavy and I just want my way, like, right now.

Currently, if I could get my way in all things life, this is how it’d go:

1. More hours in the day for me to work and say hi to friends.

2. I’d be able to drink copious amount of gin without having an awful hangover face. I can’t swing it–not a youngin’ anymore, guys. Depressing.

3. I’d drink coffee at 9pm and still be in bed by midnight. I’m totally not sensitive to caffeine at 8am, but it ruins me after 6pm. Truly unfair.

4. At Chipotle I’d be able to assemble my very own burrito. They’re very nice people at Chipotle but I just wanna do it myself.

When I’m sensing my brattiness is taking over my usual good and positive nature, I gotta put myself in check. ‘Cause seriously look at what I made! Look at what I have had in my life! Crispy hash browns! With cheese! All topped with a runny egg. Such a good look!

Hi Jalapeño. Hi Bacon. Hi Cheese.

It’s kind of crazy to think that all those glorious things can exist in one bite…but they do. They totally do.

Hiiii Abby!!!

This blog post is dedicated to Abby.

Abby emailed me a few weeks ago requesting a recipe that could be made in the microwave. You see…Abby is shacking it up in a dorm this year with only two kitchey-type tools at her disposal: a microwave and a mini-fridge. And since she wants to spend her money on more important things like booze, shoes textbooks, she wanted it to be budget friendly.

No biggie, Abby; I got you, gurrrrl!

Meet the Twice Baked Potatoes. They meet the criteria, for sure. They’re perfect for fallish, chilly weather; they take barely any effort/money; and they can be made in either a microwave OR oven. #thricebingo

I made ‘em two ways: decadent and amazing (bacon, cheddar, jalapenos, sour cream) and healthy and good (yogurt, chives, zucchini).

I’m not even gonna pretend the healthy way tastes better. It just doesn’t. BUT it is healthier …so there’s that.

Before we continue with talk about zucchini and cheese and butter, can I get emotional on you for a second?

Warning: This might get awkward.

Apologies in advance, but I have to comment on Jennifer Perillo. As many of you know, Jennie, last week, lost her husband. People reached out and asked how they could help. And all she asked from people was to make a peanut butter pie and share it with their loved ones.

And then…something magical happened: everyone did. All of you did. And it was incredible. I’ve never been so proud to be a part of a group of people as much as I was last week. So I wanted to thank you. And tell you you’re all so incredibly beautiful. It can all be ripped from us so quickly, can’t it? So fragile. So delicate. That’s the one commonality we all understood…crystal clear. You all make me believe in the power of good all over again. Truly.

Alright, my tears are wiped…can we talk about butter now? Butter makes people feel better.
