Chocolate

Okay, I know that Valentine’s day is coming up, and maybe you guys out there are trying to think of what to buy your special lady friend. Here’s a hint: she wants some chocolate. Even if she says she doesn’t, she wants some chocolate. Her resistance is coming from the fact that she doesn’t want an extra pound of weight to squeeze into her jeans. That just isn’t any fun.

You know what would make you a rock star? Chocolate that won’t add on the pounds. Chocolate that she can eat a big bowl of. Or even…go for seconds. And, you’re gonna make it yourself. We’re talking triple brownie points.

It took me exactly three tries to get home to my parent’s place in Florida.

(Really long story. But I did in fact miss my flight…as I stood near the gate.  Like I said, realllly long story. The tale involves an ear infection and Delta not being so nice. The end.)

But I’m home now, sitting by the Christmas tree sipping on this Spiced Hot Chocolate, so it’s all good.  And tomorrow’s Christmas! And I’m done with all my shopping and presents are wrapped; now the only thing on my to-do list is to make The Pioneer Woman’s Cinnamon Rolls.

Have you made them? Do you have tips? I need ‘em!! Did you add chocolate to them? I’m considering it…

I’ve decided to cut the recipe in half, since I don’t need 50 cinnamon rolls in my life right now. New Year’s is soon and I need to fit into something besides my pjs.

Hi!

What are you doing right this very second? I bet you’re probably trying to figure out how you’re gonna get all cute for the party you’re excited about AND bake people cookies, quickbreads and crackers.

 

Well I thought about this very predicament and have a solution. Yep, I’m full of solutions.

 

I have homemade chocolate chip pancake mix!

Step away from the oven and dig into your pantry. Because giving away breakfast in a jar is about 5 minutes away.

Mousse always sounds a little hoity toity to me. It sounds like something that you should be eating in fancy crystal glasses at the end of an elegant four course meal. It also sounds like something that should be difficult to make. These are all the reasons why I’ve been quite hesitant to take it on.

Let’s make something perfectly clear: there really are no excuses for not making mouse. Especially with this recipe. This is quick and easy mousse and absolutely delicious. Basically, you’re just going to whip up some egg white and heavy cream until they are light and fluffy, then combine with some yummy melted chocolate.

Then you top with blackberries. Don’t forget these.

Unless you use rasberries. Those are tasty too.

Whoa! December, where did you come from? These upcoming weeks are gonna be intense, right? Holiday parties, pretty dresses and tights, shopping, lots of to-do lists.

It’s time to take a break. Sit in front of the TV, watch It’s a Wonderful Life, paint your nails….and then when they dry, get your Profiterole makin’ on!

Consider learning how to make this cream puff dough like a gateway recipe to all things awesome. For instance, once you get this down you can make Profiteroles (see above), eclairs and all sorts of other pastries. You see, when you open them up there’ll be a gigantic, gaping whole. It’s meant for you to fill it with all sorts of custards, cremes, or in this case, ice cream.

Amazing. And surprisingly not too, too difficult.

Remember when you were a kid, and on special occasions your mom would make chocolate chip pancakes for breakfast? This of course meant you got to eat chocolate for your main meal and didn’t have to wait for dessert. That was super cool. One time I was actually allowed to eat chocolate chip pancakes for dinner. I thought my little kid head might just explode.

It’s kinda how I feel about this panini. A panini with brie is nothing new to me, but chocolate? Oh my lord does that sound good. And now we’re adding basil? Yeah, I think my adult head just exploded.

Chocolate truffles are an awesome gift to receive. I mean, who hates getting a package of chocolate truffles ?

The only thing better than getting truffles is giving them to someone else. Didn’t your mother tell you it’s better to give than receive? Yeah, it’s true.

Raise your hand if you have a coffee addiction!

Whoa! A heck load of you raised your hand. You know what, I used to be ashamed of my coffee habit, vowing every few months to go on some cleanse to nix it, but I’ve read the reviews and coffee is healthy for me (antioxidants, people).

There are actually nights where I go to bed looking forward to the next morning’s cup of coffee.  I’ve finally come to terms with my addiction and am no longer ashamed. In fact, I recently told myself that I was going to find new ways to implement it in food I love. First way? Mocha Popsicles! Shut up…yes, they’re so amazing. So amazing that on my way into work, I dripped one all over that oxford blue shirt you see in the picture.  (By the way, this is a very common occurence with me.) Thank heavens I use my trunk as a 2nd closet. I’m proud to say that I actually had ample choices to change into! Woo hoo!

Let’s talk popsicles…

They have super strong coffee in them. They have chocolate.  And sweetened condensed milk. Basically, these Mocha Popsicles have every awesome thing ever created.  Except cheese. But that’d just be weird.

Dear Recession,

I hate you I dislike you. I think it’s time for you to go away now, don’t you think? Look! I made you oatmeal cookies…think of it as a parting gift of sorts. So leave…now. You’ve caused nothing but trouble ever since you arrived and everyone is sorta tired of your face.

And to all you people that caused this, you sort of make me sick. My friends can’t seem to fund their movies, or get money for their art projects.  A bunch of my favorite restaurants and boutiques have closed their doors, which in turn has lead to a whole bunch of people now working jobs they don’t like just to pay the rent (and that’s if they can even find a job) all ’cause of you. People have shed a lot of tears, families have broken up, and overall, you’ve just made life a whole lot harder for a whole lot of people.  Sooo…I’m thinking you owe us something, dontcha think?  I think you owe us some cookies…I mean, it’s really the least you could do.  It certainly won’t make us forget, but you know, we’ll call it an olive branch.  And since  I’m pretty confident you can afford it, I’m demanding you put some bacon in those cookies, and I think Valhorna chocolate chips are also in order (see below for example).

So dig into your bonus-filled pockets, put on a cute, little apron and get baking. You suuure do have a lot of cookies to bake.

I have a distinct memory from my childhood of my mother and I buying a coconut with the intention of eating the flesh and coconut milk inside. However, we got it home and sort of looked at each other to see who would make the first move to open it. I assumed that since she was my mother she of course knew all the secrets of the universe and was utterly shocked to discover that neither she nor my step-dad knew what to do. My stepfather, who flew jet planes in Vietnam and assembled my bike on Christmas day, was stumped by this little brown ball in our shopping bag.
